Norwegian cake

Here’s a classic Norwegian Cake recipe, often called “Kvæfjordkake” or World’s Best Cake in Norway. It’s light, layered, and topped with almonds and meringue.


🍰 Norwegian Kvæfjordkake (World’s Best Cake)

🛒 Ingredients (24 cm / 9-inch pan)

Cake Layer:

  • 150 g (2/3 cup) unsalted butter, softened
  • 6 large egg yolks
  • 150 g (3/4 cup) sugar
  • 1 tsp vanilla extract
  • 120 g (1 cup) all-purpose flour
  • 2 tsp baking powder
  • 50 g (1/3 cup) cornstarch
  • 2 tbsp milk

Meringue Topping:

  • 6 egg whites
  • 150 g (3/4 cup) sugar
  • 50 g (1/3 cup) sliced almonds

Filling:

  • 300 ml (1¼ cup) heavy cream
  • 2 tbsp powdered sugar
  • 1 tsp vanilla extract

🔥 Instructions

1️⃣ Preheat & Prep

  • Preheat oven to 175°C (350°F).
  • Grease and line a 9-inch pan.

2️⃣ Cake Batter

  1. Beat butter with sugar until creamy.
  2. Add egg yolks one at a time, then vanilla.
  3. Sift flour, cornstarch, and baking powder; fold into butter mixture with milk.

3️⃣ Meringue

  • Beat egg whites to soft peaks, gradually add sugar, and beat to stiff, glossy peaks.

4️⃣ Assemble & Bake

  1. Spread cake batter evenly in pan.
  2. Gently spread meringue on top.
  3. Sprinkle sliced almonds.
  4. Bake 35–40 minutes, until golden and meringue is set.

5️⃣ Cool & Fill

  • Let cake cool completely.
  • Whip cream with powdered sugar and vanilla.
  • Slice cake horizontally (or top layer of meringue), spread whipped cream.

🍴 Serving

  • Slice into squares or wedges.
  • Optionally dust with cocoa or drizzle with chocolate.
  • Best served the same day for meringue crispness, but still delicious next day.
