No-bake eclair cake

Yum — a no-bake eclair cake is one of the easiest (and most delicious) desserts ever! 😋
It tastes like a chocolate eclair but is made with layers of graham crackers, creamy pudding, and chocolate frosting — no oven needed!


🍰 No-Bake Eclair Cake Recipe

Ingredients

  • 1 box (14.4 oz / 400g) graham crackers
  • 2 boxes (3.4 oz each) instant vanilla pudding mix
  • 3 cups cold milk
  • 1 container (8 oz) Cool Whip or 1½ cups whipped cream

Chocolate Topping (Easy Homemade Ganache Version)

  • 1 cup semi-sweet chocolate chips
  • ½ cup heavy cream
    (or you can use 1 can of store-bought chocolate frosting if you want it super quick)

Instructions

  1. Make the pudding layer:
    • In a large bowl, whisk together pudding mix and cold milk until thickened (about 2 minutes).
    • Gently fold in the Cool Whip until smooth and creamy.
  2. Assemble the layers:
    • In a 9×13-inch dish, lay a single layer of graham crackers to cover the bottom.
    • Spread half of the pudding mixture over the crackers.
    • Add another layer of graham crackers.
    • Spread the remaining pudding mixture on top.
    • Finish with one last layer of graham crackers.
  3. Make the chocolate topping:
    • Heat the cream until just simmering (stovetop or microwave).
    • Pour over chocolate chips and let sit 1 minute, then stir until smooth and glossy.
    • Spread evenly over the top graham cracker layer.
  4. Chill:
    • Cover with plastic wrap and refrigerate for at least 6 hours, or overnight if possible.
    • The crackers soften and turn cake-like as it chills.
  5. Serve:
    • Slice into squares and enjoy straight from the fridge!

🍫 Tips & Variations

  • Swap vanilla pudding for French vanilla, cheesecake, or chocolate flavor.
  • Add sliced bananas or strawberries between layers for a fruity twist.
  • Use chocolate graham crackers for an extra rich version.
