No-bake chocolate biscuit cake

Here’s a simple and delicious recipe for a no-bake chocolate biscuit cake—perfect if you want something rich and chocolatey without using the oven.


Ingredients

  • 200 g (about 7 oz) digestive biscuits or tea biscuits
  • 100 g (about 1/2 cup) unsalted butter
  • 100 g (about 1/2 cup) dark chocolate (or milk chocolate if you prefer)
  • 1/4 cup sugar (adjust to taste)
  • 2–3 tbsp cocoa powder
  • 3–4 tbsp milk
  • 1 tsp vanilla extract
  • Optional: nuts, dried fruits, or chocolate chips

Instructions

1. Prepare the biscuits:

  • Break the biscuits into small pieces (rough chunks, not crumbs) and set aside.

2. Make the chocolate mixture:

  • In a heatproof bowl over simmering water (or in a microwave in short bursts), melt the butter and chocolate together.
  • Add sugar, cocoa powder, milk, and vanilla extract. Mix until smooth and well combined.

3. Combine biscuits and chocolate:

  • Pour the broken biscuits into the chocolate mixture and stir until every piece is coated.
  • If using nuts or dried fruits, fold them in now.

4. Shape the cake:

  • Line a loaf pan or round cake pan with parchment paper.
  • Pour the mixture into the pan and press it down firmly with a spatula.
  • Smooth the top.

5. Chill:

  • Refrigerate for at least 2–3 hours (or overnight) until firm.

6. Serve:

  • Slice and enjoy! You can dust with cocoa powder or drizzle with melted chocolate for extra flair.
