Mediterranean spinach and feta crisps

Here’s a simple and delicious recipe for Mediterranean Spinach and Feta Crisps—perfect as a snack, appetizer, or party bite.


Ingredients (makes ~12–15 crisps)

  • 1 sheet puff pastry (thawed if frozen)
  • 1 cup fresh spinach, chopped
  • ½ cup crumbled feta cheese
  • 1 small onion or shallot, finely chopped (optional)
  • 1 garlic clove, minced
  • 1 tsp dried oregano
  • 1 tsp lemon zest (optional, for freshness)
  • 1 egg, beaten (for egg wash)
  • Salt and pepper, to taste
  • Olive oil for sautéing

Instructions

  1. Preheat oven:
    • Preheat to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Prepare the filling:
    • Heat a little olive oil in a pan.
    • Sauté onion and garlic until soft.
    • Add spinach and cook until wilted.
    • Remove from heat and stir in feta, oregano, lemon zest, salt, and pepper. Let it cool slightly.
  3. Prepare the pastry:
    • Roll out puff pastry on a lightly floured surface.
    • Cut into small squares or rectangles (~2–3 inches).
  4. Assemble crisps:
    • Place a spoonful of the spinach and feta mixture in the center of each pastry square.
    • Fold the edges over slightly or leave open (like little tarts).
    • Brush the edges with beaten egg for a golden finish.
  5. Bake:
    • Bake for 12–15 minutes, until the pastry is puffed and golden brown.
  6. Serve:
    • Let cool slightly and enjoy warm.

✅ Tip:

  • You can add chopped sun-dried tomatoes or olives for extra Mediterranean flavor.
  • These crisps are also great to make ahead and reheat briefly in the oven before serving.
