Meatloaf with mashed potatoes and cheese

Perfect! Here’s a simple and tasty recipe for meatloaf with cheesy mashed potatoes:


Ingredients

For the meatloaf:

  • 1 lb (450 g) ground beef
  • 1/2 lb (225 g) ground pork or turkey (optional, can just use beef)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup breadcrumbs
  • 1/2 cup milk
  • 1 large egg
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp Worcestershire sauce (optional)
  • 1/2 cup ketchup or BBQ sauce (for topping)

For the mashed potatoes:

  • 4 large potatoes, peeled and cubed
  • 3 tbsp butter
  • 1/2 cup milk (more if needed)
  • 1 cup shredded cheddar cheese (or mix of cheeses)
  • Salt and pepper to taste

Instructions

1. Make the meatloaf:

  1. Preheat oven to 375°F (190°C).
  2. In a large bowl, mix ground meat, onion, garlic, breadcrumbs, milk, egg, salt, pepper, and Worcestershire sauce.
  3. Shape the mixture into a loaf and place it in a baking dish.
  4. Spread ketchup or BBQ sauce over the top.
  5. Bake for 50–60 minutes, or until the meatloaf reaches an internal temperature of 160°F (71°C).

2. Make the mashed potatoes:

  1. Boil the potatoes in salted water for 15–20 minutes until tender.
  2. Drain and return to the pot.
  3. Mash the potatoes with butter and milk until smooth.
  4. Stir in the shredded cheese until melted and creamy.
  5. Season with salt and pepper to taste.

3. Serve:

  • Slice the meatloaf and serve alongside the cheesy mashed potatoes.
  • Optional: drizzle a little extra ketchup or gravy on top for extra flavor.

💡 Tip: You can bake the meatloaf and mash the potatoes while it’s cooking to save time. If you want extra cheesy potatoes, sprinkle a little extra cheese on top and broil for 2–3 minutes until golden.
