Marshmallow caramel corn

Here’s a simple marshmallow caramel corn recipe—sweet, gooey, and easy to make 🍿

Ingredients

  • 10–12 cups popped popcorn (plain, no butter or salt)
  • 1 cup mini marshmallows (or ~20 large)
  • ½ cup brown sugar
  • ¼ cup butter
  • 2 tbsp corn syrup or honey
  • ½ tsp vanilla extract
  • Pinch of salt (optional)

Instructions (Stovetop)

  1. Pop the popcorn and place it in a large bowl. Remove unpopped kernels.
  2. In a saucepan over medium heat, melt the butter.
  3. Stir in brown sugar and corn syrup. Bring to a gentle boil and cook 2–3 minutes, stirring constantly.
  4. Lower heat and add marshmallows. Stir until completely melted and smooth.
  5. Remove from heat, add vanilla (and salt if using).
  6. Pour over popcorn and gently stir until evenly coated.
  7. Spread on parchment paper to cool slightly, or eat warm for extra gooey goodness.

Optional Add-Ins

  • Mini chocolate chips (add after cooling a bit)
  • Peanuts or almonds
  • Pretzel pieces
  • Sprinkles (for a fun twist)

Quick Microwave Version

  • Melt butter, brown sugar, corn syrup, and marshmallows together in a microwave-safe bowl (30-second intervals, stirring).
  • Stir in vanilla, then pour over popcorn.
