Here’s a classic Marinated Cucumbers, Onions, and Tomatoes recipe — a crisp, tangy salad that’s perfect for summer or as a refreshing side any time of year.


🥒 Marinated Cucumbers, Onions, and Tomatoes

Serves: 4–6
Prep time: 10 minutes
Marinating time: 2–4 hours (or overnight for best flavor)


Ingredients:

  • 2 medium cucumbers, thinly sliced

  • 3 medium tomatoes, cut into wedges or thick slices

  • 1 small red or yellow onion, thinly sliced

  • ½ cup apple cider vinegar (or white vinegar)

  • ¼ cup water

  • 3 tablespoons olive oil (optional for a smoother dressing)

  • 2 tablespoons sugar (adjust to taste)

  • 1 teaspoon salt

  • ½ teaspoon black pepper

  • ½ teaspoon dried dill (or 1 tablespoon fresh dill, chopped)

  • Optional: a pinch of red pepper flakes for a little heat


Instructions:

  1. Combine vegetables:
    In a large bowl, layer or mix the cucumbers, tomatoes, and onions.

  2. Make the marinade:
    In a separate bowl or jar, whisk together the vinegar, water, oil (if using), sugar, salt, pepper, and dill until the sugar dissolves.

  3. Pour and toss:
    Pour the marinade over the vegetables. Toss gently to coat everything evenly.

  4. Chill and marinate:
    Cover and refrigerate for at least 2 hours, stirring once or twice. For deeper flavor, marinate overnight.

  5. Serve:
    Stir again before serving. Serve cold or at room temperature. It pairs beautifully with grilled meats, sandwiches, or southern-style meals.


Tip:
If you want it less tangy, replace half the vinegar with water or add an extra teaspoon of sugar.
