🥓 Low-Carb Bacon Cheeseburger Casserole

Ingredients

  • 1 lb (450 g) ground beef
  • 6 slices bacon, chopped
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup shredded cheddar cheese (or your favorite cheese)
  • ½ cup cream cheese, softened
  • ½ cup heavy cream
  • 2 large eggs
  • 1 tsp mustard
  • 1 tsp Worcestershire sauce (optional, check carb content)
  • Salt & pepper, to taste
  • Optional toppings: diced pickles, sugar-free ketchup, chopped tomatoes, extra shredded cheese

Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9×9-inch (or similar) baking dish.
  2. Cook bacon in a skillet until crisp. Remove and set aside, leaving some fat in the pan.
  3. Cook beef, onion, and garlic in the same skillet until beef is browned. Drain excess fat if necessary.
  4. In a bowl, whisk together cream cheese, heavy cream, eggs, mustard, Worcestershire, salt, and pepper until smooth.
  5. Layer beef mixture in the baking dish, sprinkle half the cheddar cheese, then add bacon.
  6. Pour cream mixture over the top. Sprinkle remaining cheddar cheese on top.
  7. Bake 20–25 minutes until the casserole is set and cheese is bubbly.
  8. Let sit 5 minutes before serving. Add optional toppings if desired.

  • Swap bacon for sausage for a different twist.
  • Use mozzarella or pepper jack for extra flavor.
  • Great with a side salad or roasted veggies for a full low-carb meal.
