Here’s a low-calorie, sugar-free Christmas milk cake that’s soft, festive, and much lighter than the traditional version:

🍰 Ingredients

For the cake:

  • 1 cup whole wheat flour (or oat flour)
  • 2 eggs
  • ½ cup low-fat milk
  • ¼ cup Greek yogurt
  • 2–3 tbsp stevia / erythritol (or any sugar-free sweetener)
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • Pinch of salt

For the milk soak:

  • 1 cup low-fat milk
  • ½ cup unsweetened almond milk
  • 1–2 tbsp sugar-free sweetener
  • Few drops rose water or cardamom powder (for festive flavor)

Optional topping:

  • Light whipped cream (sugar-free)
  • Crushed nuts (almonds, pistachios)
  • Cinnamon sprinkle

👩‍🍳 Instructions

1. Bake the Cake

  1. Preheat oven to 180°C (350°F).
  2. In a bowl, whisk eggs, yogurt, milk, vanilla, and sweetener.
  3. Add flour, baking powder, and salt. Mix until smooth.
  4. Pour into a greased pan and bake for 20–25 minutes.
  5. Let the cake cool slightly.

2. Prepare Milk Mixture

  • Mix both milks with sweetener and cardamom or rose water.

3. Soak the Cake

  • Poke holes in the cake using a fork.
  • Slowly pour the milk mixture over it so it absorbs well.

4. Chill & Decorate

  • Refrigerate for 1–2 hours.
  • Add sugar-free whipped cream and nuts before serving.

💡 Tips

  • Use erythritol + stevia blend for best taste (less aftertaste).
  • Don’t overbake—the softer the cake, the better it absorbs milk.
  • Add a few saffron strands for a richer festive touch.
