Here’s a delicious recipe for Lemon Meltaway Cookies 🍋—soft, buttery, and melt-in-your-mouth cookies with a bright lemony flavor.


🍪 Ingredients (Makes ~24 cookies)

For the Cookies:

  • 1 cup (225g) unsalted butter, softened
  • 1/2 cup (60g) powdered sugar (plus extra for rolling)
  • 2 tsp lemon zest (from 1–2 lemons)
  • 1 tsp vanilla extract
  • 2 cups (250g) all-purpose flour
  • 1/4 tsp salt

Optional Glaze:

  • 1/2 cup (60g) powdered sugar
  • 1–2 tbsp fresh lemon juice

1️⃣ Prepare the Dough

  1. In a large bowl, cream the butter and powdered sugar together until light and fluffy.
  2. Mix in lemon zest and vanilla extract.
  3. Gradually add flour and salt, mixing until a soft dough forms.

2️⃣ Shape the Cookies

  1. Preheat oven to 350°F (175°C).
  2. Roll dough into 1-inch balls and place them 2 inches apart on a baking sheet lined with parchment paper.
  3. Optional: Roll each ball in powdered sugar for extra sweetness.

3️⃣ Bake

  1. Bake for 12–15 minutes until the bottoms are lightly golden.

  1. Mix powdered sugar and lemon juice to make a smooth glaze.
