🍋🧄 Lemon Garlic Butter Shrimp

Ingredients (Serves 4)

  • 1 lb (450 g) large shrimp, peeled & deveined
  • 3 tbsp unsalted butter
  • 1 tbsp olive oil
  • 4 cloves garlic, minced
  • Juice of 1 lemon (plus zest if desired)
  • Salt & black pepper, to taste
  • ¼ tsp red pepper flakes (optional)
  • 2 tbsp fresh parsley, chopped
  • Lemon wedges, for serving

Instructions

  1. Pat shrimp dry with paper towels and season lightly with salt and pepper.
  2. Heat olive oil and 1 tbsp butter in a large skillet over medium heat.
  3. Add shrimp in a single layer. Cook 1–2 minutes per side until pink and opaque. Remove and set aside.
  4. In the same pan, melt remaining butter. Add garlic and sauté 30–60 seconds (don’t brown it).
  5. Stir in lemon juice (and zest if using). Simmer briefly.
  6. Return shrimp to the pan and toss to coat in the sauce.
  7. Sprinkle with parsley and red pepper flakes. Serve immediately with lemon wedges.

  • Over pasta or linguine
  • With rice or cauliflower rice
  • With crusty bread to soak up the sauce
  • Alongside roasted vegetables

  • Don’t overcook — shrimp turn rubbery quickly.
