🍋 Lemon Garlic Butter Chicken Recipe

Ingredients

  • 4 boneless, skinless chicken breasts (or thighs)

  • 1 tsp salt

  • ½ tsp black pepper

  • ½ tsp paprika (optional, for color)

  • 2 tbsp olive oil

  • 3 tbsp butter, divided

  • 4 cloves garlic, minced

  • Juice of 1 large lemon (about 3 tbsp)

  • Zest of 1 lemon (optional, for extra brightness)

  • ½ cup chicken broth (or white wine for richer flavor)

  • 1 tbsp chopped fresh parsley (for garnish)


🔪 Instructions

  1. Season the Chicken:
    Pat chicken dry with paper towels. Season both sides with salt, pepper, and paprika.

  2. Sear the Chicken:

    • Heat olive oil and 1 tbsp butter in a large skillet over medium-high heat.

    • Add chicken and cook 4–5 minutes per side until golden brown and cooked through (internal temp: 165°F / 74°C).

    • Remove chicken from the skillet and set aside.

  3. Make the Sauce:

    • In the same pan, reduce heat to medium.

    • Add 2 tbsp butter and minced garlic; sauté for 30 seconds until fragrant (don’t let it burn).

    • Stir in lemon juice, zest, and chicken broth (or wine).

    • Scrape up the brown bits from the bottom of the pan — that’s flavor!

    • Simmer for 2–3 minutes until slightly reduced.

  4. Combine:
    Return the chicken to the pan and spoon the sauce over the top.
    Simmer another 1–2 minutes so it soaks up the flavors.

  5. Serve:
    Garnish with fresh parsley and extra lemon slices if desired.

  • Serve over rice, mashed potatoes, or pasta to soak up the sauce.

  • Pair with steamed broccoli, green beans, or roasted asparagus.
