Lemon bars are a perfect balance of tangy, sweet, and buttery goodness! They have a crisp, buttery crust with a smooth, lemony filling that’s sweet and tart all at once. These bars are simple to make and always a hit at gatherings, picnics, or as an afternoon treat with tea. Here’s an easy and classic recipe for Lemon Bars:

Classic Lemon Bars Recipe

Ingredients:

For the Crust:

  • 1 1/2 cups all-purpose flour
  • 1/4 cup powdered sugar
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, cold and cubed

For the Lemon Filling:

  • 4 large eggs
  • 1 1/4 cups granulated sugar
  • 1/4 cup all-purpose flour
  • 1/2 tsp baking powder
  • 1/2 cup freshly squeezed lemon juice (about 2-3 lemons)
  • Zest of 1 lemon
  • Powdered sugar, for dusting (optional)

Instructions:

1. Preheat the oven:

  • Preheat your oven to 350°F (175°C). Grease a 9×9-inch (or 8×8-inch) baking dish, or line it with parchment paper for easy removal.

2. Make the crust:

  • In a medium bowl, combine the flour, powdered sugar, and salt.
  • Add the cold, cubed butter to the bowl. Using a pastry cutter, fork, or your fingers, cut the butter into the dry ingredients until the mixture resembles coarse crumbs. Alternatively, you can use a food processor for this step.
  • Press the dough evenly into the bottom of the prepared baking dish, forming the crust.
  • Bake the crust for 15-18 minutes, or until lightly golden. While the crust is baking, make the lemon filling.

3. Make the lemon filling:

  • In a large bowl, whisk together the eggs, granulated sugar, flour, and baking powder until smooth.
  • Stir in the freshly squeezed lemon juice and lemon zest.
  • Once the crust is done, remove it from the oven and pour the lemon filling mixture over the hot crust.

4. Bake the lemon bars:

  • Return the pan to the oven and bake for 20-25 minutes, or until the filling is set and slightly golden around the edges. The center should not jiggle when you gently shake the pan.
  • Remove the lemon bars from the oven and let them cool completely in the pan on a wire rack.

5. Dust with powdered sugar:

  • Once the bars have cooled to room temperature, dust the top with powdered sugar (optional, but it adds a nice touch).
  • Slice into squares or bars. The crust should be firm, and the lemon filling should be smooth and slightly tangy.

6. Serve:

  • Serve chilled or at room temperature. These bars are refreshing, tangy, and just the right amount of sweetness. They’re great for a light dessert after dinner or a sweet snack throughout the day.

Tips for Perfect Lemon Bars:

  • Fresh lemon juice: For the best flavor, always use fresh lemons for both the juice and zest. Bottled lemon juice doesn’t have the same fresh, vibrant taste.
  • Chill before cutting: For clean, neat slices, allow the lemon bars to chill in the fridge for at least an hour before cutting. This helps the filling firm up and prevents it from running when you slice.
  • Adjust sweetness/tartness: If you like your lemon bars extra tart, you can add a little more lemon juice. For sweeter bars, increase the sugar slightly.
  • Make ahead: These bars store well! You can make them a day or two ahead of time and keep them in the fridge. Just cover them tightly with plastic wrap.

Lemon bars are the perfect dessert for when you’re craving something refreshing and light, but still indulgent. They’re simple to make but taste like a fancy treat that everyone will love.
