  • 4–5 medium carrots

  • 1–2 tsp vinegar (white or apple cider)
  • ½ tsp ground black pepper
  • ½ tsp red pepper flakes or chili powder (optional for heat)
  • 1 tsp coriander seeds, crushed (optional, gives authentic flavor)

Instructions

  1. Prepare the carrots: Peel and grate the carrots into thin sticks or use a julienne peeler.
  2. Make the seasoning: In a small pan, heat the vegetable oil until warm (not smoking). Add garlic, crushed coriander, and red pepper. Sauté for 30–60 seconds until fragrant.
  3. Mix the salad: In a large bowl, combine the carrots, salt, sugar, and black pepper. Pour the warm oil mixture over the carrots. Add vinegar.
  4. Massage & marinate: Mix everything well. Press down slightly with a spoon or your hands to release the juices. Let the salad sit for at least 30 minutes (or refrigerate for a few hours) to allow flavors to meld.
  5. Serve: Garnish with fresh herbs (like parsley or cilantro) if desired. Enjoy as a side dish or with bread and meat.
