Insalata di Pomodori (Classic Italian Tomato Salad)

Ingredients

  • Ripe tomatoes (heirloom, vine, or cherry), sliced or chunked
  • Extra-virgin olive oil (the good stuff matters here)
  • Sea salt
  • Fresh basil leaves, torn
  • Optional: thinly sliced red onion or shallot

How to make it

  1. Cut tomatoes and let them sit in a bowl for 5 minutes (this draws out their juices).
  2. Sprinkle generously with salt — this is key.
  3. Drizzle with olive oil (don’t be shy, but don’t drown it).
  4. Add basil and onion if using.
