Here’s a recipe for Incredible Mint Brownies 🍫🌿 — rich, fudgy, and packed with chocolate and mint flavor. Perfect for dessert or holiday treats.


Incredible Mint Brownies

Ingredients

Brownie Layer

  • 1 cup (2 sticks) unsalted butter
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 tsp vanilla extract
  • 1 cup all-purpose flour
  • ¾ cup unsweetened cocoa powder
  • ½ tsp salt

Mint Layer

  • 1½ cups powdered sugar
  • 3 tbsp unsalted butter, softened
  • 2–3 tbsp milk
  • ½ tsp peppermint extract
  • Green food coloring (optional)

Chocolate Ganache Topping

  • ½ cup heavy cream
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper or lightly grease.
  2. Make brownies
    • Melt butter in a saucepan or microwave.
    • Stir in sugar, then eggs one at a time, and vanilla.
    • Mix in flour, cocoa powder, and salt until smooth.
    • Pour into prepared pan and bake 25–30 minutes. Let cool completely.
  3. Prepare mint layer
    • Beat powdered sugar, butter, milk, peppermint extract, and optional food coloring until smooth and spreadable.
    • Spread evenly over cooled brownies.
  4. Make chocolate ganache
    • Heat heavy cream until just simmering.
    • Pour over chocolate chips in a bowl and let sit 1–2 minutes. Stir until smooth.
    • Pour over mint layer and smooth with a spatula.
  5. Chill & serve
    • Refrigerate for at least 1 hour before slicing for clean layers.

Tips & Variations

  • Extra fudgy brownies: Use half butter, half chocolate for the base
  • Mint intensity: Adjust peppermint extract to taste
  • Festive twist: Sprinkle crushed candy canes on top before ganache sets
  • Mini versions: Make in a cupcake pan for individual treats
