🛒 Ingredients (Serves 4)

  • 1.5 lbs (680 g) baby potatoes or small Yukon golds
  • 3 tbsp butter, melted
  • 1–2 tsp honey (adjust to taste)
  • 1–2 tbsp olive oil
  • Salt & pepper to taste
  • Optional: fresh herbs (rosemary, thyme, or parsley) for garnish

👩‍🍳 Instructions

  1. Boil potatoes: Place potatoes in a pot of salted water. Boil 15–20 minutes until fork-tender. Drain well.
  2. Preheat oven: 425°F (220°C) and line a baking sheet with parchment paper.
  3. Smash potatoes: Place boiled potatoes on the baking sheet. Use a potato masher or the bottom of a glass to gently flatten each potato to about ½-inch thick.
  4. Season & oil: Drizzle with olive oil and sprinkle with salt and pepper.
  5. Bake: 20–25 minutes until edges are crispy and golden.
  6. Honey butter finish: In a small bowl, mix melted butter and honey. Brush generously over hot potatoes.
  7. Garnish & serve: Sprinkle with fresh herbs if desired and serve immediately.

  • For extra crispiness, broil for 2–3 minutes at the end.
  • Garlic powder or smoked paprika can add extra flavor.
