Here’s a versatile guide for homemade pies—you can make sweet or savory pies from scratch. I’ll give a basic pie crust and then a few filling ideas. 🥧


Basic Pie Crust (Double Crust)

Ingredients

  • 2½ cups all-purpose flour
  • 1 tsp salt
  • 1 cup (2 sticks) cold unsalted butter, diced
  • 6–8 tbsp ice water

Instructions

  1. Mix flour and salt in a bowl.
  2. Cut in butter with a pastry cutter or your fingers until mixture is coarse, like cornmeal.
  3. Add ice water 1 tbsp at a time until dough just comes together.
  4. Divide dough in half, shape into disks, wrap in plastic, and chill 1 hour.
  5. Roll out for bottom and top crust.

Sweet Pie Fillings

1. Apple Pie

  • 6 cups peeled, sliced apples
  • ¾ cup sugar
  • 2 tbsp flour
  • 1 tsp cinnamon
  • ¼ tsp nutmeg
  • 1 tsp lemon juice

Instructions: Toss ingredients and pour into crust. Cover with top crust, cut slits, and bake at 375°F (190°C) for 45–55 mins.

2. Pumpkin Pie

  • 1 (15 oz) pumpkin puree
  • ¾ cup sugar
  • 1 tsp cinnamon
  • ½ tsp ginger
  • ½ tsp nutmeg
  • 2 eggs
  • 1 cup milk or cream

Instructions: Mix all ingredients, pour into crust, bake 425°F (220°C) 15 min, then 350°F (175°C) 40–50 min.

3. Berry Pie

  • 4 cups mixed berries (blueberry, raspberry, strawberry)
  • ¾ cup sugar
  • 2 tbsp cornstarch
  • 1 tsp lemon juice

Instructions: Mix berries with sugar and cornstarch, pour into crust, cover with lattice or full crust, bake 375°F (190°C) 40–45 min.


Savory Pie Fillings

1. Chicken & Veggie Pie

  • 2 cups cooked chicken, diced
  • 1 cup cooked veggies (peas, carrots, corn)
  • 1 cup cream of chicken or béchamel sauce

2. Beef & Mushroom Pie

  • 2 cups cooked ground beef or diced beef
  • 1 cup mushrooms, sautéed
  • 1 cup gravy or thickened broth

Instructions for both: Mix filling, pour into pie crust, cover, seal edges, and bake 375°F (190°C) 35–45 min.


Tips

  • Chill crust before baking for flakier results.
  • Brush top crust with egg wash for golden color.
  • Let pies rest 10–20 minutes before slicing for clean cuts.
  • For easy cleanup, line pan with parchment paper.
