Homemade hamburger peppers and onion gyros

Here’s a homemade hamburger, peppers, and onion gyro recipe — a quick, flavorful twist on Greek-style gyros using ground beef!


Hamburger Peppers & Onion Gyros

Ingredients (4–6 gyros)

For the Meat

  • 1 lb ground beef
  • 1 small onion, finely diced
  • 1 small bell pepper (any color), finely diced
  • 2–3 cloves garlic, minced
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp oregano
  • 1 tsp paprika
  • ½ tsp cumin (optional but adds gyro flavor)
  • ¼ tsp crushed red pepper (optional)

For Serving

  • 4–6 pita or gyro flatbreads
  • Tzatziki sauce (store-bought or homemade)
  • Sliced tomatoes
  • Sliced onions
  • Shredded lettuce (optional)
  • Feta cheese (optional but great)

Instructions

1. Cook the Meat Mixture

  1. Heat a large skillet over medium-high.
  2. Add the ground beef, breaking it up as it browns.
  3. Add diced onion, diced bell pepper, and garlic.
  4. Continue cooking until vegetables soften and beef is no longer pink.
  5. Stir in salt, pepper, oregano, paprika, cumin, and crushed red pepper.
  6. Reduce heat and let simmer 3–4 minutes to blend flavors.
  7. Taste and adjust seasoning.

2. Warm the Pita

  • Heat pita or flatbread in a dry skillet, or wrap in foil and warm in a 300°F oven for 5–7 minutes.

3. Assemble the Gyros

Layer in this order (or however you like!):

  1. Warm pita
  2. Spoonful of beef-pepper-onion mixture
  3. Generous drizzle of tzatziki
  4. Tomatoes and onions
  5. Feta cheese and lettuce if using

Fold like a taco or roll tightly in parchment.


Homemade Tzatziki (Optional)

  • 1 cup Greek yogurt
  • ½ cucumber, grated & squeezed dry
  • 1 tbsp lemon juice
  • 1 tbsp olive oil
  • 1–2 cloves garlic, minced
  • ½ tsp salt
  • 1 tbsp chopped dill (or mint)

Mix everything together. Chill 20–30 minutes.


Tips & Variations

  • Add sautéed sliced onions + peppers on top for extra texture.
  • Use half ground beef, half ground lamb for a more authentic gyro taste.
  • Make it spicy by adding fresh jalapeño or hot paprika.
  • Meal prep friendly — the meat reheats very well.
