Here’s a homemade fruit-loaded cake that’s moist, colorful, and packed with real fruit—perfect for any season 🍓🍍🍌


Fruit-Loaded Cake (from scratch)

Ingredients

Cake

  • 2½ cups all-purpose flour
  • 2 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 tsp cinnamon (optional)
  • ¾ cup sugar
  • ½ cup brown sugar
  • ¾ cup oil or melted butter
  • 3 large eggs
  • 1 tsp vanilla extract
  • ¾ cup milk or buttermilk

Fruit Mix (about 3 cups total – use what you like)

  • 1 cup diced apples or pears
  • 1 cup crushed pineapple (well-drained)
  • ½ cup berries (strawberries, blueberries, or raisins)
  • ½ cup mashed banana or chopped peaches

(Toss fruit with 2 tbsp flour to prevent sinking)


Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×13 pan or two 9-inch round pans.
  2. Whisk flour, baking powder, baking soda, salt, and cinnamon.
  3. In another bowl, mix sugars, oil, eggs, vanilla, and milk.
  4. Combine wet and dry ingredients until just mixed.
  5. Fold in floured fruit gently.
  6. Pour batter into pan.
  7. Bake 40–50 minutes (9×13) or 30–35 minutes (round pans).
  8. Cool before frosting or glazing.

Optional Toppings

  • Cream cheese frosting
  • Vanilla glaze (powdered sugar + milk + vanilla)
  • Whipped cream and fresh fruit
  • Light dusting of powdered sugar

Tips for Best Results

  • Don’t use watery fruit without draining well.
  • Frozen fruit is fine—do not thaw first.
  • Want extra moisture? Add ¼ cup sour cream or yogurt.
  • For holiday vibes, add nuts or shredded coconut.
