Cake:

  • ¾ cup granulated sugar

Instructions

  1. Preheat Oven & Prep Pan
    • Preheat oven to 175 °C (350 °F).
    • Grease and flour an 8×8-inch baking pan or line with parchment paper.
  2. Mix Dry Ingredients
    • In a bowl, whisk together flour, baking powder, baking soda, and salt.
  3. Cream Butter & Sugar
    • In a separate bowl, beat butter and sugar until light and fluffy.
    • Add eggs one at a time, then vanilla extract.
  4. Combine Wet & Dry
    • Mix in sour cream and drained crushed pineapple.
    • Gradually fold in dry ingredients until just combined.
  5. Bake
    • Pour batter into prepared pan.
    • Bake for 35–40 minutes or until a toothpick comes out clean.
    • Let cool in pan for 10 minutes, then transfer to a wire rack.
  6. Add Pineapple Glaze (Optional)
    • Mix powdered sugar with pineapple juice until smooth.
    • Drizzle over cooled cake for extra sweetness and shine.
