🍍 Hawaiian Bliss Roasted Chicken

Ingredients (serves 4–6)

Chicken

  • 1 whole chicken (4–5 lb) or 6–8 bone-in chicken pieces
  • Salt and black pepper, to taste
  • 1 tbsp olive oil

Hawaiian Marinade/Glaze

  • 1/2 cup pineapple juice
  • 1/4 cup soy sauce (low-sodium if preferred)
  • 1/4 cup brown sugar or honey
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, grated (or 1 tsp ground ginger)
  • 2 tbsp ketchup
  • 1 tbsp apple cider vinegar or rice vinegar
  • Optional: 1/2 tsp smoked paprika or black pepper

Optional add-ins

  • Pineapple chunks
  • Red bell pepper slices
  • Red onion wedges

Instructions

  1. Preheat oven
    • Preheat to 375°F (190°C).
    • Lightly grease a roasting pan or baking dish.
  2. Season chicken
    • Pat chicken dry.
    • Rub with olive oil, salt, and pepper.
    • Place in roasting pan.
  3. Make sauce
    • In a bowl, whisk together pineapple juice, soy sauce, brown sugar, garlic, ginger, ketchup, vinegar, and paprika.
  4. Roast
    • Pour half the sauce over the chicken.
    • Add pineapple, peppers, and onions around the chicken if using.
    • Cover loosely with foil and roast 35–40 minutes.
  5. Glaze & finish
    • Remove foil.
    • Brush chicken with remaining sauce.
    • Roast uncovered 20–30 minutes, basting once or twice, until chicken is golden and reaches 165°F (74°C) internally.
  6. Rest & serve
    • Let rest 10 minutes before serving.
    • Spoon pan juices over chicken.

Tips

  • For crispier skin, broil the chicken for 2–3 minutes at the end.
  • Serve with rice, coconut rice, or roasted sweet potatoes.
  • Leftovers are great shredded for sandwiches or wraps.
