Harvard Beets

Harvard Beets are a classic American side dish made with beets in a sweet-and-sour sauce. Despite the name, they are not actually from Harvard University—the name likely came from the deep crimson color associated with Harvard.

🥗 Simple Harvard Beets Recipe

Ingredients

  • 2 cups cooked beets (sliced or cubed)
  • ¼ cup sugar
  • 2 tbsp vinegar (apple cider or white)
  • 1 tbsp butter
  • 1 tbsp cornstarch
  • ½ cup beet juice or water
  • Pinch of salt

Instructions

  1. In a saucepan, mix sugar and cornstarch.
  2. Add beet juice (or water) and vinegar, then stir well.
  3. Cook on medium heat until the sauce thickens.
  4. Stir in butter and salt.
  5. Add the cooked beets and simmer for 5 minutes until coated in the glossy sauce.
