Hamburger Steaks with Onion Gravy

Here’s a classic and delicious way to make Hamburger Steaks with Onion Gravy! I’ll give you a full recipe with tips for the juiciest patties and richest gravy.


Ingredients

For the Hamburger Steaks:

  • 1 lb (450 g) ground beef (preferably 80/20 for juiciness)
  • 1/2 cup breadcrumbs
  • 1/4 cup milk
  • 1 small onion, finely chopped
  • 1 large egg
  • 1 tsp Worcestershire sauce
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder (optional)
  • 2 tbsp oil or butter (for frying)

For the Onion Gravy:

  • 1 large onion, thinly sliced
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 2 cups beef broth
  • 1 tsp Worcestershire sauce
  • Salt and pepper to taste

Instructions

1. Make the Hamburger Steaks:

  1. In a small bowl, soak the breadcrumbs in milk for a few minutes until softened.
  2. In a large bowl, combine the ground beef, soaked breadcrumbs, chopped onion, egg, Worcestershire sauce, salt, pepper, and garlic powder. Mix gently—overmixing can make patties tough.
  3. Divide the mixture into 4 equal portions and shape into oval or round patties, about 1/2 inch thick.

2. Cook the Hamburger Steaks:

  1. Heat 2 tbsp of oil or butter in a large skillet over medium heat.
  2. Add the patties and cook 4–5 minutes per side, until nicely browned and cooked through (internal temp ~160°F / 71°C).
  3. Remove patties from skillet and set aside.

3. Make the Onion Gravy:

  1. In the same skillet, add 2 tbsp butter. Add sliced onions and sauté over medium heat until soft and golden brown (~8–10 minutes).
  2. Sprinkle flour over the onions and cook 1–2 minutes to eliminate the raw taste.
  3. Gradually whisk in beef broth and Worcestershire sauce. Cook, stirring, until gravy thickens (~5–7 minutes).
  4. Taste and adjust seasoning with salt and pepper.

4. Combine:

  1. Return hamburger steaks to the skillet, spoon gravy over them, and let simmer for a couple of minutes so the flavors meld.

5. Serve:

  • Serve with mashed potatoes, rice, or buttered noodles and steamed vegetables.
