Ingredients
- 2 tbsp butter or oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 3–4 cups potatoes, peeled and diced
- 1½–2 cups cooked ham, diced
- 4 cups chicken broth (or vegetable broth)
- 1 cup milk (or half-and-half for creamier soup)
- 2 tbsp flour
- Salt & pepper, to taste
- ½ tsp paprika (optional)
- ½ tsp dried thyme or parsley (optional)
Instructions
- In a large pot, melt butter over medium heat.
- Add onion and cook until soft (3–4 minutes). Add garlic and cook 30 seconds.
- Stir in flour and cook 1 minute.
- Slowly add broth, stirring to avoid lumps.
- Add potatoes and bring to a gentle boil. Reduce heat and simmer 12–15 minutes, until potatoes are tender.
- Add ham, milk, and seasonings.
- Simmer another 5–10 minutes, stirring occasionally.
- Taste and adjust salt and pepper.

- Carrots or celery for extra veggies

Tips
- Mash a few potatoes in the pot to thicken naturally.
