🥯 Halloumi Bagel Bites

Ingredients (makes ~12 bites)

  • 6 mini bagels or 3 regular bagels, halved
  • 8 oz (225 g) halloumi cheese, sliced into small cubes or strips
  • 1–2 tbsp olive oil
  • 1 tsp dried oregano or za’atar
  • Optional toppings: cherry tomatoes, sliced olives, red pepper flakes, fresh basil, or a drizzle of honey

Instructions

  1. Preheat oven:
    Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Prepare bagels:
    Cut mini bagels in half. Place on the baking sheet, cut side up.
  3. Cook halloumi:
    Heat olive oil in a skillet over medium heat. Sear halloumi cubes 1–2 minutes per side until golden. (Optional: you can bake halloumi on top of the bagels instead.)
  4. Assemble bites:
    Place seared halloumi on each bagel half. Sprinkle with oregano or za’atar. Add optional toppings like cherry tomatoes or olives.
  5. Bake (optional):
    Bake for 5–7 minutes to warm bagels and melt halloumi slightly. Skip baking if you prefer a fresh, crisp halloumi texture.
  6. Serve:
    Serve warm as a snack, appetizer, or light meal.
