Here’s a quick, hearty ground beef & vegetable skillet — one pan, lots of flavor, and perfect for a busy night 🍳🥩🥕


Ground Beef & Vegetable Skillet

Ingredients

  • 1 lb ground beef
  • 1 tbsp olive oil (if needed)
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 cups mixed vegetables
    (broccoli, carrots, bell peppers, zucchini, green beans, or frozen mix)
  • 1 cup diced potatoes or cooked rice (optional)
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp paprika
  • 1/2 tsp Italian seasoning or thyme
  • 1 tbsp Worcestershire sauce or soy sauce
  • Optional: 1/2 cup shredded cheese

Instructions

  1. Brown the beef
    • Heat a large skillet over medium heat.
    • Add ground beef and onion; cook until beef is browned.
    • Drain excess grease if needed.
  2. Add garlic & seasoning
    • Stir in garlic, salt, pepper, paprika, and seasoning.
    • Cook 30 seconds.
  3. Add vegetables
    • Stir in vegetables and potatoes (if using).
    • Cover and cook 10–15 minutes, stirring occasionally, until veggies are tender.
    • Add a splash of water or broth if the pan gets dry.
  4. Finish
    • Stir in Worcestershire or soy sauce.
    • Top with cheese if using and cover until melted.

Easy Variations

  • Mexican-style: taco seasoning + corn + black beans
  • Asian-style: soy sauce, ginger, garlic, and sesame oil
  • Low-carb: skip potatoes/rice, add more greens
  • Cheesy: stir in cream cheese or shredded cheddar

Serve With

  • On its own
  • Over rice or mashed potatoes
  • With a side salad or bread
