Here’s a Greek-style Roasted Garlic & Spinach White Pizza that’s rich, garlicky, cheesy, and full of Mediterranean flavor.


🧀 Greek Roasted Garlic Spinach White Pizza

Ingredients (1 large pizza)

For the roasted garlic white sauce

  • 1 whole head of garlic
  • 1 tbsp olive oil
  • 2 tbsp butter
  • 2 tbsp flour
  • 1 cup whole milk or half-and-half
  • ¼ cup grated Parmesan
  • Salt & black pepper to taste
  • Pinch of oregano (optional)

For the pizza

  • 1 pizza dough (store-bought or homemade)
  • 1–1½ cups shredded mozzarella
  • ½–1 cup fresh spinach (chopped)
  • ½ cup crumbled feta
  • ¼ cup sliced Kalamata olives
  • ¼ small red onion, thinly sliced
  • Dried oregano or za’atar (optional)
  • Olive oil, for brushing
  • Cornmeal or flour for dusting

🔥 Instructions

1. Roast the garlic

  1. Preheat oven to 400°F (200°C).
  2. Slice the top off the garlic head to expose the cloves.
  3. Drizzle with olive oil, wrap in foil, and roast 35–40 min until soft and caramelized.
  4. When cool, squeeze cloves out and mash into a paste.

2. Make the white sauce

  1. In a saucepan, melt butter over medium heat.
  2. Stir in flour to make a roux; cook 1 minute.
  3. Whisk in milk gradually until smooth and thickened.
  4. Add roasted garlic paste and Parmesan.
  5. Season with salt, pepper, and oregano.
  6. Simmer on low for 2–3 minutes.

3. Assemble the pizza

  1. Increase oven to 475°F (245°C). Heat a pizza stone if available.
  2. Stretch the dough into a circle and place on a floured or cornmeal-dusted surface.
  3. Brush edges lightly with olive oil.
  4. Spread a generous layer of the roasted garlic white sauce.
  5. Add:
    • Mozzarella
    • Spinach
    • Feta
    • Kalamata olives
    • Red onion
  6. Sprinkle oregano or za’atar on top (optional).

4. Bake

  • Bake 10–14 minutes, until the crust is crisp and golden and cheese is bubbly.
  • Let rest 2 minutes before slicing.

  • Drizzle of extra-virgin olive oil
  • Fresh lemon zest
  • Red pepper flakes
  • Fresh dill or basil
