  4. Make the batter: In a separate bowl, mix flour, sugar, baking powder, and salt. Stir in milk (and optional vanilla) until smooth.
  5. Assemble the cobbler: Pour the batter over the melted butter in the baking dish—do not stir. Spoon the peach mixture evenly over the batter; it will sink slightly as it bakes.
  6. Bake for 40–45 minutes, or until the top is golden brown and the peach filling is bubbling.
  7. Cool slightly before serving. Best warm, with a scoop of vanilla ice cream or a dollop of whipped cream.
