Gooey raspberry white chocolate cookies

Posted on November 22, 2025 by Admin

Ah, yes! Gooey raspberry white chocolate cookies are a perfect balance of tart fruitiness and sweet, melty chocolate. I can give you a detailed recipe that yields soft, chewy, and slightly gooey cookies every time. Here’s one that works beautifully:

Gooey Raspberry White Chocolate Cookies

Ingredients (makes ~18–20 cookies)

  • 1 cup (225g) unsalted butter, softened
  • 3/4 cup (150g) granulated sugar
  • 3/4 cup (165g) light brown sugar, packed
  • 2 large eggs
  • 2 tsp vanilla extract
  • 2 1/2 cups (315g) all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 1/2 cups white chocolate chips or chunks
  • 1 cup fresh raspberries (or frozen, thawed and drained)
  • Optional: 1 tsp lemon zest for a bright flavor

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream butter and sugars in a large bowl until light and fluffy (~2–3 minutes).
  3. Add eggs and vanilla, mixing until fully incorporated.
  4. Whisk together dry ingredients (flour, baking soda, baking powder, salt) in a separate bowl. Gradually add to the wet mixture until just combined. Don’t overmix—this keeps cookies soft.
  5. Fold in white chocolate and raspberries gently. If using frozen raspberries, gently pat them dry with a paper towel first to prevent excess moisture.
  6. Scoop dough (about 2 tbsp per cookie) onto the prepared baking sheet. Leave space for spreading.
  7. Bake for 10–12 minutes, until edges are set but the centers are still slightly soft. They’ll firm up as they cool but remain gooey.
  8. Cool on the baking sheet for 5 minutes before transferring to a wire rack.

Tips for Extra Gooeyness

  • Slightly underbake; they continue cooking on the tray.
  • For bigger gooey pockets, press a few extra white chocolate chunks into the top of each cookie right after baking.
  • If you want a tart-sweet punch, drizzle a little raspberry reduction over warm cookies.

If you want, I can also give you a “super gooey, almost brownie-like” version with even more melty texture—it’s dangerously addictive!

Do you want me to give that upgraded version too?
