This dessert combines a buttery tart crust with a golden, chewy coconut macaroon filling. It’s rich, simple, and perfect for gatherings.


📝 Ingredients

For the Tart Crust

  • 1½ cups all-purpose flour
  • ½ cup unsalted butter (cold, cubed)
  • 3 tablespoons sugar
  • 1 egg yolk
  • 2–3 tablespoons cold water

For the Coconut Macaroon Filling

  • 2½ cups sweetened shredded coconut
  • ⅔ cup sugar
  • 2 large egg whites
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt
  • Optional: ¼ cup melted butter for extra richness

👩‍🍳 Instructions

1. Make the Crust

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, mix flour and sugar.
  3. Cut in cold butter until the mixture resembles crumbs.
  4. Add egg yolk and cold water until a dough forms.
  5. Press dough into a 9-inch tart pan.
  6. Bake for 10–12 minutes until lightly golden.

2. Prepare the Macaroon Filling

  1. In a bowl, mix shredded coconut, sugar, salt, and vanilla.
  2. Stir in egg whites (and melted butter if using).
  3. Mix until everything is evenly coated.

3. Assemble and Bake

  1. Spread the coconut mixture over the pre-baked crust.
  2. Bake 20–25 minutes until the top turns golden brown.
  3. Let cool completely before slicing.

🍫 Optional Toppings

  • Drizzle with melted dark chocolate
  • Add toasted almonds
  • Serve with whipped cream

💡 Tips

  • Use unsweetened coconut if you prefer less sweetness.
  • If the top browns too quickly, cover loosely with foil.
  • Chill the tart for cleaner slices.
