  • 4 cups fresh or canned peaches, sliced

Method

1. Preheat Oven

  • Preheat oven to 350°F (175°C).
  • Grease an 8×8-inch baking dish.

2. Prepare the Filling

  • In a bowl, combine peaches, sugar, vanilla, cinnamon, lemon juice, and cornstarch.
  • Pour into the prepared baking dish.

3. Make the Topping

  • In another bowl, mix gluten-free flour, sugar, baking powder, and salt.
  • Cut in cold butter until the mixture resembles coarse crumbs.
  • Stir in milk and vanilla until just combined (do not overmix).

4. Assemble the Cobbler

  • Drop spoonfuls of topping over the peach filling.
  • Slightly spread to cover some of the peaches but don’t completely smooth out—it will bake into a biscuit-like topping.

5. Bake

  • Bake 35–40 minutes, until the topping is golden brown and filling is bubbly.
  • Let cool slightly before serving.

6. Serve
