Here’s a Garlic Mushrooms & Cauliflower Skillet — a simple, flavorful, low-carb side or main dish that’s ready in under 20 minutes. 🥦🍄🧄


🥘 Garlic Mushrooms & Cauliflower Skillet

Serves: 2–4
Prep & Cook Time: ~20 minutes


Ingredients

  • 1 small head of cauliflower, cut into florets
  • 8 oz mushrooms, sliced (white or cremini)
  • 3–4 cloves garlic, minced
  • 2–3 tbsp olive oil or butter
  • Salt & pepper, to taste
  • 1/2 tsp smoked paprika or chili flakes (optional)
  • Fresh parsley or thyme for garnish
  • Optional: grated Parmesan cheese for serving

Instructions

1. Cook the cauliflower

  1. Heat 1–2 tbsp olive oil or butter in a large skillet over medium heat.
  2. Add cauliflower florets and season with salt and pepper.
  3. Cook 5–7 minutes, stirring occasionally, until lightly browned and tender but still crisp.

2. Cook the mushrooms

  1. Push cauliflower to one side of the skillet.
  2. Add remaining oil/butter and mushrooms.
  3. Sauté 4–5 minutes until mushrooms release moisture and start to brown.

3. Add garlic & season

  1. Add minced garlic to the skillet.
  2. Sauté 1–2 minutes until fragrant.
  3. Stir everything together, adjust salt and pepper.
  4. Optional: sprinkle smoked paprika or chili flakes for a little heat.

4. Finish & serve

  • Garnish with fresh parsley or thyme.
  • Optional: sprinkle Parmesan cheese on top.
  • Serve as a side dish, or over rice, quinoa, or pasta for a main dish.

⭐ Variations

  • Creamy version: Add 1/4 cup cream or cream cheese at the end for a rich sauce.
  • Lemon-garlic: Squeeze fresh lemon juice over finished dish for brightness.
  • Keto-friendly: Add cooked bacon bits or sausage slices.
  • Asian twist: Add soy sauce, sesame oil, and a sprinkle of sesame seeds.

I can also give a one-pan roasted version in the oven that brings extra caramelization to the cauliflower and mushrooms if you want a slightly different flavor.
