🥩 Garlic Butter Steak Bites

Ingredients

  • 1½ lbs sirloin, ribeye, or New York strip steak, cut into 1-inch cubes

  • 1 tbsp olive oil

  • 3 tbsp butter, divided

  • 4 cloves garlic, minced

  • Salt and black pepper, to taste

  • 1 tbsp chopped parsley (optional, for garnish)

Directions

  1. Prep the steak:
    Pat cubes dry with paper towels (this helps them sear). Season generously with salt and pepper.

  2. Sear:
    Heat olive oil in a large skillet over medium-high heat.
    Once hot, add steak cubes in a single layer (don’t crowd the pan).
    Sear for 1–2 minutes per side, until browned and cooked to your liking.
    Remove and set aside on a plate.

  3. Make garlic butter:
    Reduce heat to medium, add 2 tbsp butter, and stir in garlic.
    Cook for 30 seconds, until fragrant (don’t burn it).

  4. Combine:
    Return steak to the pan, toss in the garlic butter, and add the last 1 tbsp butter for richness.
    Stir to coat well.

  5. Finish:
    Sprinkle with chopped parsley and serve immediately.


🧀 Cheesy Smashed Potatoes

Ingredients

  • 1½ lbs baby potatoes (Yukon gold or red)

  • 2 tbsp olive oil

  • 2 tbsp butter, melted

  • ½ tsp garlic powder

  • Salt and black pepper, to taste

  • 1 cup shredded cheddar cheese (or mozzarella for extra stretch)

  • 2 tbsp chopped chives or parsley (optional)

Directions

  1. Boil the potatoes:
    Place whole baby potatoes in a large pot of salted water.
    Boil for 15–20 minutes, until fork-tender. Drain and let cool slightly.

  2. Smash:
    Line a baking sheet with parchment paper.
    Arrange the potatoes and gently press down with a fork or cup to flatten slightly (about ½ inch thick).

  3. Season:
    Drizzle with olive oil and melted butter.
    Sprinkle with garlic powder, salt, and pepper.

  4. Bake:
    Roast in a 425°F (220°C) oven for 20–25 minutes, until golden and crispy on the edges.

  5. Add cheese:
    Sprinkle shredded cheese over the hot potatoes and return to the oven for 3–5 minutes, until melted and bubbly.

  6. Finish:
    Top with chives or parsley, and serve hot beside your steak bites.

Plate the cheesy smashed potatoes, spoon the garlic butter steak bites over top, and drizzle any leftover garlic butter from the pan on everything. Add a side of steamed green beans or asparagus for balance.
