🧅🌭 Fried Onions with Smoked Glazed Sausage

Ingredients (4 servings)

  • 2 lbs yellow onions, thinly sliced (yes, lots of onions!)
  • 1 lb smoked sausage (kielbasa, andouille, or beef sausage), sliced
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 2 cloves garlic, optional
  • 2 tbsp brown sugar
  • 1 tbsp Dijon or whole-grain mustard
  • 1 tbsp apple cider vinegar
  • Salt & black pepper, to taste
  • Optional: smoked paprika, red pepper flakes

Instructions

  1. Caramelize the Onions
    • Heat butter and olive oil in a large skillet over medium-low heat.
    • Add onions with a pinch of salt.
    • Cook 20–25 minutes, stirring often, until deep golden and soft.
  2. Add Sausage
    • Push onions to the side.
    • Add sausage slices; brown 3–4 minutes per side.
  3. Glaze
    • Stir in brown sugar, mustard, and vinegar.
    • Add garlic if using.
    • Toss everything together and cook 2–3 minutes until glossy and sticky.
  4. Season & Serve
    • Taste and adjust seasoning.
    • Finish with black pepper or smoked paprika.

Variations

  • Beer onions: Deglaze pan with ¼ cup beer before glazing
  • Maple glaze: Swap brown sugar for maple syrup
  • Extra onions: Add sliced red onions near the end for sweetness
  • Cabbage add-in: Toss in sliced cabbage for a pierogi-style skillet
  • Spicy: Use hot sausage or add chili flakes
