Fried catfish with red beans & rice

Here’s a full Southern-style meal: crispy fried catfish served with classic red beans & rice. Comforting, flavorful, and perfect for Sunday dinner or any soul-food night.


🎣 Crispy Fried Catfish + Red Beans & Rice


🍳 CRISPY FRIED CATFISH

Ingredients (Serves 4)

  • 4 catfish fillets
  • 1 cup buttermilk
  • 1 tbsp hot sauce (optional but recommended)
  • 1 cup cornmeal
  • ½ cup flour
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp cayenne pepper (optional)
  • 1 tsp salt
  • ½ tsp black pepper
  • Oil for frying (peanut or vegetable)

Instructions

1. Marinate

  1. Mix buttermilk + hot sauce in a shallow bowl.
  2. Add catfish fillets and soak 30 minutes (up to 4 hours).
    This tenderizes the fish and helps coating stick.

2. Dredge

Mix in a shallow dish:

  • cornmeal
  • flour
  • paprika
  • garlic powder
  • onion powder
  • cayenne
  • salt & pepper

Remove catfish from buttermilk and coat thoroughly in the cornmeal mixture.
Shake off excess.


3. Fry

  1. Heat oil to 350–360°F.
  2. Fry fillets 3–4 minutes per side, until golden brown and crispy.
  3. Drain on a wire rack or paper towels.
  4. Sprinkle with a little extra salt while hot.

👉 Tip: For extra crispiness, double-dredge — dip back in buttermilk, then cornmeal again.


🍛 RED BEANS & RICE (Classic Style)

Ingredients

  • 1 tbsp oil or bacon grease
  • 1 onion, diced
  • 1 bell pepper, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 lb smoked sausage or andouille, sliced (optional but authentic)
  • 1 can (15 oz) red beans, drained & rinsed
    OR 2 cups cooked red beans
  • 3 cups chicken broth
  • 1 tsp paprika
  • 1 tsp thyme
  • 1 bay leaf
  • ½ tsp black pepper
  • ½ tsp cayenne (optional)
  • Salt to taste
  • 2 cups cooked white rice

Instructions

1. Sauté Veggies & Sausage

In a pot:

  1. Heat oil.
  2. Add onion, bell pepper, and celery (the “holy trinity”).
  3. Cook 5–7 minutes until softened.
  4. Add garlic and sausage; sauté 3–4 minutes.

2. Add Beans & Seasonings

Stir in:

  • red beans
  • broth
  • paprika
  • thyme
  • bay leaf
  • cayenne
  • pepper

Simmer 20–25 minutes to thicken.
Mash ¼ of the beans with the back of a spoon to make it creamier.

Taste and adjust salt.


3. Serve

Spoon red beans over hot white rice.


🌶️ Serving the Whole Plate

Place a scoop of red beans & rice on the plate, add a crispy catfish fillet on the side, and serve with:

  • hot sauce (Crystal or Louisiana)
  • lemon wedges
  • coleslaw
  • cornbread
  • hushpuppies

✨ Variations

Extra-Crispy Catfish

Add 2 tbsp cornstarch to the cornmeal mix.

Cajun Catfish

Add 1 tbsp Cajun seasoning to the dredge.

Creamier Red Beans

Simmer 45+ minutes or add 1 tbsp butter at the end.

Spicy Red Beans

Stir in extra cayenne or sliced jalapeño.
