Fried Alligator Bites

Servings: 4

Ingredients:

  • 1 lb alligator meat, cut into bite-sized pieces
  • 1 cup buttermilk
  • 1 cup all-purpose flour
  • ½ cup cornmeal (optional, for extra crunch)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • ½ tsp cayenne pepper (optional, for spice)
  • Salt and black pepper to taste
  • Oil for frying (vegetable, canola, or peanut oil)

Optional dipping sauce:

  • Ranch dressing, remoulade, or hot sauce

Instructions:

  1. Marinate the alligator:
    • Place alligator pieces in a bowl and pour buttermilk over them.
    • Cover and refrigerate at least 1 hour (or overnight for extra tenderness).
  2. Prepare the coating:
    • In a shallow dish, mix flour, cornmeal, garlic powder, onion powder, paprika, cayenne, salt, and pepper.
  3. Coat the meat:
    • Remove alligator pieces from buttermilk, letting excess drip off.
    • Dredge each piece in the flour mixture, pressing lightly to coat evenly.
  4. Fry the alligator:
    • Heat oil in a deep skillet or pot to 350°F (175°C).
    • Fry the pieces in batches for 3–5 minutes, until golden brown and crispy.
    • Drain on paper towels.
  5. Serve:
    • Serve hot with your favorite dipping sauce.

💡 Tips:

  • Alligator meat can be tough if overcooked, so fry quickly until just cooked through.
  • For extra Cajun flavor, add Cajun seasoning to the flour mix.
  • Works great as an appetizer, in po’boys, or over rice.
