Fresh Southern Peach Cobbler

Ingredients

Filling

  • 5–6 fresh peaches, peeled and sliced (about 6 cups)
  • ½ cup granulated sugar
  • ¼ cup brown sugar
  • 1 tsp lemon juice
  • ½ tsp cinnamon
  • ¼ tsp nutmeg (optional)
  • 2 tsp cornstarch (for thickening)

Topping

  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1 tsp baking powder
  • ¼ tsp salt
  • 1 cup milk
  • ¼ cup butter, melted
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Prepare filling
    • In a large bowl, combine sliced peaches, granulated sugar, brown sugar, lemon juice, cinnamon, nutmeg, and cornstarch.
    • Toss gently and pour into a greased 9×13-inch baking dish.
  3. Make topping
    • In another bowl, whisk together flour, sugar, baking powder, and salt.
    • Stir in milk, melted butter, and vanilla until smooth.
  4. Assemble cobbler
    • Pour batter over the peach mixture. Don’t worry if it doesn’t cover completely; it will spread while baking.
  5. Bake
    • Bake 40–45 minutes, until topping is golden and peaches are bubbly.
  6. Serve
    • Best served warm with vanilla ice cream or whipped cream.
