Fluffy French Toast

Here’s a perfect Fluffy French Toast recipe—thick, soft, custardy in the middle, golden and crisp on the outside. The “fluffy” secret is in the batter and the soaking time!


🍞 Fluffy French Toast

Ingredients (Serves 4)

  • 8 slices thick-cut bread (brioche or challah is best)
  • 4 large eggs
  • ¾ cup milk or half-and-half
  • ¼ cup heavy cream (optional but makes it extra fluffy)
  • 2 tbsp sugar
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • Pinch of salt
  • 1 tbsp butter (for the pan)

Instructions

1. Make the Fluffy Custard

Whisk together:

  • eggs
  • milk
  • heavy cream
  • sugar
  • vanilla
  • cinnamon
  • salt

Whisk until light and slightly frothy.

2. Prep the Bread

Use day-old, thick slices.
If your bread is soft, let slices air-dry for 10–15 minutes so they absorb the custard instead of getting soggy.

3. Soak the Bread

Dip each slice for 20–30 seconds per side (thick bread can soak longer).
You want it saturated—but not falling apart.

4. Cook

  1. Heat a nonstick pan or griddle over medium.
  2. Melt a bit of butter.
  3. Cook each slice 2–3 minutes per side until golden and puffy.
  4. Don’t squish the toast—let it rise!

5. Serve

Best hot and fresh with:

  • maple syrup
  • powdered sugar
  • berries
  • whipped cream
  • cinnamon butter

⭐ Tips for Extra Fluffiness

  • Use half-and-half or cream for a richer custard.
  • Let the custard sit for 5 minutes so bubbles lighten it.
  • Cook at medium heat so the inside cooks without burning the outside.
  • Use brioche, challah, or thick Texas toast for the best rise.
