Ingredients:

  • 1 unbaked pie crust (store-bought or homemade)

  • 3 large eggs

  • 3/4 cup sugar

  • 2 1/2 cups milk (or 1 cup cream + 1 1/2 cups milk for richer custard)

  • Optional: pinch of nutmeg or cinnamon for topping

Instructions:

  1. Preheat oven to 350°F (175°C).

  2. Roll out and fit the pie crust into a 9-inch pie pan. Prick the bottom lightly with a fork.

  3. In a bowl, whisk eggs and sugar until combined.

  4. Gradually whisk in milk and vanilla until smooth.

  5. Pour mixture into the pie crust.

  6. Sprinkle a little nutmeg or cinnamon on top if desired.

  7. Bake 45–55 minutes, until the custard is set but still slightly wobbly in the center. A knife inserted near the center should come out mostly clean.

  8. Let cool before slicing; it will firm up as it cools.
