Here’s an easy, cheesy meatloaf that comes together fast and stays juicy.


Easy Meatloaf with Cheese

Ingredients

  • 1 lb ground beef (80/20 works best)
  • 1 cup shredded cheese (cheddar, Colby-Jack, or mozzarella)
  • 1 cup breadcrumbs or crushed crackers
  • 1 egg
  • ½ cup milk
  • ½ small onion, finely diced (or 1 tsp onion powder)
  • 2 cloves garlic, minced (or 1 tsp garlic powder)
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp Italian seasoning (optional)

Topping

  • ⅓ cup ketchup
  • 2 tbsp brown sugar
  • 1 tbsp mustard (optional)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large bowl, mix all meatloaf ingredients gently until just combined.
  3. Shape into a loaf and place in a greased baking dish or loaf pan.
  4. Mix topping ingredients and spread over loaf.
  5. Bake 45–55 minutes, until internal temp hits 160°F.
  6. Rest 10 minutes, then slice.

Optional Cheesy Upgrade

  • Add extra cheese on top during the last 10 minutes
  • Or stuff half the cheese in the center for a molten middle 🤤

Tips

  • Don’t overmix — that’s how meatloaf gets tough.
  • Milk + egg = moist meatloaf every time.
  • Swap half the beef for ground turkey if you want lighter.
