Here’s an easy, cheesy meatloaf that comes together fast and stays juicy.
Easy Meatloaf with Cheese
Ingredients
- 1 lb ground beef (80/20 works best)
- 1 cup shredded cheese (cheddar, Colby-Jack, or mozzarella)
- 1 cup breadcrumbs or crushed crackers
- 1 egg
- ½ cup milk
- ½ small onion, finely diced (or 1 tsp onion powder)
- 2 cloves garlic, minced (or 1 tsp garlic powder)
- 1 tsp salt
- ½ tsp black pepper
- 1 tsp Italian seasoning (optional)
Topping
- ⅓ cup ketchup
- 2 tbsp brown sugar
- 1 tbsp mustard (optional)
Instructions
- Preheat oven to 375°F (190°C).
- In a large bowl, mix all meatloaf ingredients gently until just combined.
- Shape into a loaf and place in a greased baking dish or loaf pan.
- Mix topping ingredients and spread over loaf.
- Bake 45–55 minutes, until internal temp hits 160°F.
- Rest 10 minutes, then slice.
Optional Cheesy Upgrade
- Add extra cheese on top during the last 10 minutes
- Or stuff half the cheese in the center for a molten middle 🤤
Tips
- Don’t overmix — that’s how meatloaf gets tough.
- Milk + egg = moist meatloaf every time.
