Here’s a simple, flavorful dry rub for chicken wings—crispy, bold, and no sauce needed.
Classic Dry Rub Chicken Wings
Ingredients
- 2 lb (900 g) chicken wings, patted very dry
- 1 tbsp baking powder (key for crispiness — not baking soda)
- 2 tsp paprika (smoked if you have it)
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp salt
- ½ tsp black pepper
- ½ tsp chili powder or cayenne (optional, for heat)
- ½ tsp dried oregano or thyme
Instructions
- Preheat oven to 220°C / 425°F. Line a baking tray with foil and place a wire rack on top.
- Mix all dry rub ingredients in a bowl.
- Toss wings thoroughly in the rub until evenly coated.
- Arrange wings on the rack, skin-side up, not touching.
- Bake for 40–45 minutes, flipping halfway, until golden and crispy.
- Rest 5 minutes, then serve.
Optional Flavor Twists
- Lemon Pepper: Add 1½ tsp lemon zest + extra black pepper
- BBQ Style: Add 1 tbsp brown sugar + ½ tsp cumin
- Garlic Parmesan: Toss cooked wings with grated parmesan + parsley
