Here’s a fresh and easy cucumber salad recipe—crisp, tangy, and perfect as a side dish:


Ingredients (serves 2–4)

  • 2 large cucumbers, thinly sliced
  • 1/2 small red onion, thinly sliced (optional)
  • 2 tbsp vinegar (white, apple cider, or rice vinegar)
  • 1 tbsp olive oil
  • 1 tsp sugar or honey (optional)
  • Salt and pepper to taste
  • Fresh herbs like dill or parsley (optional)

Method

  1. Prepare Cucumbers
  • Wash and thinly slice cucumbers.
  • Optional: Sprinkle with a pinch of salt and let sit 10 minutes to draw out excess water, then pat dry.
  1. Make Dressing
  • In a small bowl, whisk together vinegar, olive oil, sugar/honey, salt, and pepper.

  • Toss cucumbers (and onion, if using) with the dressing.
  1. Chill and Serve
  • Refrigerate for 15–30 minutes to let flavors meld.
  • Garnish with fresh dill or parsley before serving.

Tips

  • For a creamy version, add 2 tbsp Greek yogurt to the dressing.
  • Add tomatoes or radishes for extra color and flavor.
  • Works well with grilled meats, sandwiches, or rice dishes.
