Here’s a simple and flavorful Crockpot Pepper Steak recipe—tender beef with peppers in a savory sauce, perfect for an easy weeknight dinner.


Crockpot Pepper Steak

Servings: 4

Ingredients

  • 1 ½ lb beef sirloin or flank steak, thinly sliced against the grain
  • 2 tbsp soy sauce
  • 1 tbsp cornstarch
  • 1 tbsp vegetable oil
  • 1 large onion, sliced
  • 2–3 bell peppers (any color), sliced
  • 3 cloves garlic, minced
  • 1 cup beef broth
  • 2 tbsp soy sauce
  • 1 tbsp Worcestershire sauce
  • 1 tsp black pepper (or more to taste)
  • ½ tsp crushed red pepper flakes (optional)
  • 1 tbsp cornstarch mixed with 2 tbsp water (for thickening)

Instructions

  1. Prepare beef
    • In a bowl, toss beef slices with 1 tbsp soy sauce and 1 tbsp cornstarch until evenly coated.
  2. Sear beef (optional but recommended)
    • Heat oil in a skillet over medium-high heat and sear beef 1–2 minutes per side until lightly browned.
  3. Assemble in crockpot
    • Place onion, bell peppers, and garlic in the bottom of the crockpot.
    • Add beef on top.
  4. Add sauce
    • Pour beef broth, remaining soy sauce, Worcestershire sauce, black pepper, and red pepper flakes over beef and vegetables.
  5. Cook
    • Cover and cook on low for 6–7 hours or high for 3–4 hours until beef is tender.
  6. Thicken sauce
    • About 15–20 minutes before serving, stir in cornstarch-water mixture and cook until sauce thickens.
  7. Serve
    • Serve over steamed rice, noodles, or mashed potatoes. Garnish with fresh parsley if desired.

  • Tender beef: Slice beef thinly and against the grain for maximum tenderness.
  • Vegetable variations: Add mushrooms, broccoli, or snap peas in the last hour of cooking.
  • Spicy twist: Increase crushed red pepper or add a dash of sriracha.
