🤠 Crockpot Cowboy Soup

Ingredients (Serves 6–8)

  • 1 lb ground beef or ground turkey
  • 1 small onion, diced
  • 1 bell pepper, diced (any color)
  • 2 cloves garlic, minced
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) pinto beans, drained and rinsed
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (14–15 oz) diced tomatoes
  • 1 can (8 oz) tomato sauce
  • 1 cup corn kernels (frozen or canned)
  • 2 cups beef or chicken broth
  • 1–2 tsp chili powder (adjust to taste)
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • Salt and black pepper to taste
  • Optional toppings: shredded cheese, sour cream, chopped green onions, cilantro, crushed tortilla chips

Instructions

1. Brown the Meat

  1. In a skillet, brown the ground beef or turkey over medium heat.
  2. Drain excess fat.

2. Combine Ingredients in Crockpot

  • Add cooked meat, onion, bell pepper, garlic, all beans, diced tomatoes, tomato sauce, corn, broth, chili powder, cumin, smoked paprika, salt, and pepper to the slow cooker.

3. Cook

  • Cover and cook on LOW for 6–8 hours or HIGH for 3–4 hours, until vegetables are tender and flavors are well combined.

4. Serve

  • Ladle into bowls and top with your choice of shredded cheese, sour cream, green onions, cilantro, or crushed tortilla chips.
  • Serve with cornbread or crusty bread for a complete meal.
