  • 1 can (10.5 oz) cream of mushroom or cream of chicken soup
  • 1/2 cup milk
  • 1 tsp smoked paprika
  • 1/2 tsp black pepper
  • 1/2 tsp salt (adjust to taste)
  • 1/2 tsp dried thyme or Italian seasoning
  • Optional: chopped parsley for garnish

Instructions

1. Prep the crockpot:

  • Spray the crockpot with non-stick cooking spray or lightly grease it.

2. Layer the ingredients:

  • Add diced potatoes to the bottom of the crockpot.
  • Layer chopped onion, bell peppers, and minced garlic.
  • Add sliced kielbasa on top.

3. Mix the creamy sauce:

  • In a small bowl, whisk together the cream of mushroom (or chicken) soup, milk, paprika, salt, pepper, and thyme.
  • Pour the mixture over the ingredients in the crockpot.

4. Cook:

  • Cover and cook on low for 6–7 hours or high for 3–4 hours, until potatoes are tender.

5. Add the cheese:

  • About 15–20 minutes before serving, sprinkle shredded cheese on top.
  • Cover again and let the cheese melt completely.

6. Serve:

  • Garnish with fresh parsley if desired.
  • Serve straight from the crockpot for an easy, comforting dinner.
