Crockpot Beef Ragu 🍝 (Rich Italian Slow-Cooked Sauce)

Crockpot Beef Ragu is a hearty Italian-style meat sauce where beef slowly cooks until tender and shreddable. The slow cooker does most of the work, creating a deep, rich flavor perfect for pasta, polenta, or mashed potatoes.


🛒 Ingredients

  • 2 lbs beef chuck roast

  • 1 tbsp olive oil

  • 1 onion, finely chopped

  • 3 garlic cloves, minced

  • 2 carrots, diced

  • 2 tbsp tomato paste

  • 1 can (28 oz) crushed tomatoes

  • 1 cup beef broth

  • 1 tsp dried oregano

  • 1 tsp dried thyme

  • 1 bay leaf

  • Salt and black pepper to taste

  • 1/2 cup red wine (optional but recommended)

  • 12 oz pappardelle or spaghetti

  • Parmesan cheese and fresh parsley for garnish


👩‍🍳 Instructions

  1. Sear the beef (optional but adds flavor)
    Heat olive oil in a pan and brown the beef on all sides (3–4 minutes each side).

  2. Prepare the crockpot
    Add onion, garlic, carrots, tomato paste, crushed tomatoes, beef broth, herbs, salt, and pepper.

  3. Add the beef
    Place the browned beef into the slow cooker and pour in the red wine.

  4. Cook slowly

    • Low: 8 hours

    • High: 4–5 hours
      The beef should become very tender.

  5. Shred the beef
    Remove the beef, shred it with two forks, and return it to the sauce.

  6. Cook the pasta
    Prepare pasta according to package instructions and toss with the ragu.

  7. Serve
    Top with grated Parmesan cheese and fresh parsley.


⭐ Tips for the Best Ragu

  • Chuck roast works best because it becomes very tender when slow cooked.

  • Let the ragu sit 10–15 minutes after cooking for thicker sauce.

  • This dish actually tastes even better the next day.
