Here’s a simple and hearty recipe for Crock Pot Smoked Sausage & Potatoes—perfect for a low-effort, one-pot meal:


Ingredients (Serves 4–6)

  • 1 lb (≈450 g) smoked sausage, sliced into 1-inch pieces (like kielbasa or Andouille)
  • 1.5 lbs (≈700 g) baby potatoes, halved
  • 1 onion, sliced
  • 3 cloves garlic, minced
  • 1 bell pepper, sliced (optional)
  • 1 tsp paprika
  • 1 tsp dried thyme or Italian seasoning
  • Salt and pepper to taste
  • 1/2 cup chicken broth (or water)
  • 2 tbsp olive oil
  • Optional garnish: chopped parsley

Instructions

  1. Prep Ingredients:
    • Slice the sausage, halve the potatoes, and chop the vegetables.
  2. Layer in Crock Pot:
    • Place potatoes at the bottom of the slow cooker.
    • Add onion, bell pepper (if using), and garlic on top.
    • Sprinkle with paprika, thyme, salt, and pepper.
    • Add the sausage pieces on top.
  3. Add Liquid:
    • Pour chicken broth around the edges to avoid washing off seasoning.
    • Drizzle with olive oil.
  4. Cook:
    • Low: 6–7 hours
    • High: 3–4 hours
    • Potatoes should be tender and sausage heated through.
  5. Serve:
    • Garnish with chopped parsley.
    • Serve as-is for a filling meal or with bread on the side.

💡 Tips

  • For extra flavor, brown the sausage in a pan first before adding it to the crock pot.
  • You can add carrots or green beans in the last hour of cooking for more veggies.
  • If you like a slightly creamy version, stir in 1/2 cup sour cream or cream cheese at the end.
