Here’s a rich, comforting Crock Pot French Onion Pot Roast—tender beef slow-cooked in savory onion gravy, inspired by classic French onion flavors.


🥩 Ingredients (Serves 4–6)

  • 3–4 lb chuck roast
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp garlic powder
  • 2 tbsp olive oil
  • 2 large onions, thinly sliced
  • 3 cloves garlic, minced
  • 1 packet (1 oz) onion soup mix
  • 1 cup low-sodium beef broth
  • 1 tbsp Worcestershire sauce
  • 1 tsp fresh thyme (or ½ tsp dried)
  • 1 bay leaf
  • 1 cup shredded Gruyère or Swiss cheese (for topping)
  • Fresh parsley (optional garnish)

1️⃣ Season & Sear (Recommended)

  • Pat roast dry and season with salt, pepper, and garlic powder.
  • Heat olive oil in a skillet over medium-high heat.
  • Sear roast 3–4 minutes per side until browned.

2️⃣ Layer in Crock Pot

  • Add sliced onions and garlic to the bottom of the slow cooker.
  • Place seared roast on top.
  • Sprinkle onion soup mix over the roast.
  • Pour beef broth and Worcestershire sauce around the sides.
  • Add thyme and bay leaf.

3️⃣ Cook

  • Low: 8–9 hours
  • High: 4–5 hours
    The roast should be fork-tender and easy to shred.

4️⃣ Finish with Cheese

Option 1 (Simple):

  • Shred the roast slightly and sprinkle cheese over the top.
  • Cover and let sit 5–10 minutes until melted.

Option 2 (Extra French Onion Style):

  • Transfer roast to an oven-safe dish.
  • Top with cheese and broil 2–3 minutes until bubbly and lightly browned.
