Instructions

1. Prep the slow cooker

  1. Place chicken breasts in the Crock Pot.
  2. Add onion, carrots, celery, garlic, thyme, parsley, salt, and pepper.
  3. Pour in chicken broth.

2. Cook

  • Cover and cook on Low for 6–7 hours or High for 3–4 hours, until chicken is tender and fully cooked.

3. Shred the chicken

  • Remove chicken from the Crock Pot and shred with two forks.
  • Return shredded chicken to the slow cooker.

4. Cook the noodles

Option A: Stovetop method (preferred for best texture)

  1. Boil noodles separately until al dente.
  2. Drain and add to the slow cooker about 10 minutes before serving.

Option B: Slow cooker method

  1. Add uncooked noodles to the slow cooker in the last 30 minutes of cooking.
  2. Stir occasionally to prevent sticking.

5. Optional: Thicken the broth

  • Melt butter in a small saucepan.
  • Stir in flour to make a roux.
  • Gradually whisk in some broth from the Crock Pot until smooth, then stir back into the slow cooker.
